dc.description.abstract | [spa] Con el objetivo de hacer los preparados para lactantes lo más parecido posibles a la leche materna, éstos se suplementan con ácidos grasos poliinsaturados de cadena larga (LC-PUFA), principalmente araquidónico (AA) y docosahexaenóico (DHA), que son importantes para el óptimo desarrollo cerebral y visual del lactante. Por otro lado los LC-PUFA son muy susceptibles a la oxidación en este tipo de productos. En este trabajo se evalúa la estabilidad en diversos preparados para lactantes en polvo suplementados con diferentes fuentes de LC-PUFA: fosfolípidos de huevo, aceite de pescado microencapsulado y aceites sintetizados por microorganismos unicelulares. Además se estudian diversas fórmulas infantiles comerciales. | spa |
dc.description.abstract | [eng] In order to bringing the composition of infant formula closer to that human milk, it is supplemented with long-chain polyunsaturated fatty acids (LC-PUFA), mainly arachidonic acid (AA) and docosahexaenoic acid (DHA), which have an important role for the optimal visual and neural development of the newborn. In the other hand LC-PUFA are very susceptible to oxidation in this kind of food products. In this work it is evaluated the stability of several infant milk-base formulae supplemented with different sources of LC-PUFA: egg yolk phospholipids, microencapsulated fish oil and single cell oils.
