[eng] During the ripening process, fruits acquire the organoleptic and nutritional properties valued by consumers. However, during the postharvest period, arises the challenge of maintaining this quality, as overripening leads to the progressive degradation of the fruit until senescence. Both ripening and overripening are complex physiological processes regulated by the coordinated interaction of various phytohormones and regulatory molecules, which ultimately determine the final fruit quality. Therefore, studying the molecules involved in their regulation is crucial. In this context, melatonin has emerged as a molecule with a dual role as both an antioxidant and a regulator of physiological processes. Despite recent progress in understanding its function in the plant kingdom, its physiological role and coordination with other phytohormones during ripening and overripening continue to present many uncertainties, largely due to divergent results that vary depending on the species, tissue, and experimental methods used for its analysis. In this study, different models with high agronomic value were selected to deepen our understanding of melatonin accumulation and its regulatory role during fruit ripening and overripening, to analyze its interaction with other phytohormones, and to evaluate its potential for biotechnological applications to improve fruit quality. Based on results obtained from the study of strawberry, a key model for mechanistic research on the ripening of non-climacteric fruits, melatonin shows a differential accumulation pattern depending on the organ (achene and receptacle) and the developmental stage, corresponding to an inhibitory role in ripening. The exogenous application of melatonin induces a differential response in the ripening rate depending on the timing of application, associated with spatiotemporal changes in melatonin accumulation and its hydroxylation. Moreover, melatonin application before the onset of ripening reveals that its inhibitory function is partially linked to the regulation of auxin-related genes. Melatonin also performs as an overripening inhibitor in strawberries and shows a universal effect on delaying the deterioration of other highly perishable red fruits, such as cherries, raspberries, and blueberries. This thesis further demonstrates that its inhibitory role in overripening, through the accumulation of antioxidants and defense-related phytohormones, is tissue-specific, as shown in the study using the plum as a model. However, it is important to note that using melatonin as an active ingredient in a biostimulant to improve strawberry quality under field conditions has limitations when incorporated into a cultivation system. In conclusion, this thesis demonstrates that melatonin plays an inhibitory role in fruit ripening and overripening, with regulatory properties that rely not only on the fruit type but also on the tissue within the fruit. Additionally, melatonin works in coordination with other growth-promoting phytohormones during preharvest and with defense-related hormones in postharvest. Finally, the anti-senescent properties of melatonin position the molecule as a potential active ingredient in formulations to extend fruit shelf life, although its effects during preharvest may be influenced by crop homogenity.
