[cat] En aquest treball s’hi pot trobar, en primer lloc, informació sobre l’estructura dels enzims i els principis bàsics del seu funcionament. En segon lloc, una revisió de les seves aplicacions en el camp de la onservació-restauració, focalitzada especialment en els tres grups d’enzims hidrolítics més utilitzats (les lipases, les amilases i les peptidases), on s’hi inclouen criteris per a l’elecció de l’enzim adequat i la metodologia que cal seguir per a la seva utilització. Per últim s’hi pot consultar la documentació d’unes proves realitzades mitjançant un producte comercial a base d’α-amilasa (Albertina-Kompresse®) emprat per
a retirar pasta de farina adherida a un suport de tela de lli.
[eng] In this paper you can find, in the first place, some information about the enzymes structure and its basic properties. Secondly, a review of its applications on conservation-restoration treatments, focusing on the three most important types of hydrolases (lipases, amylases and peptidases), including the criteria for choosing the appropriate enzyme and some usage recommendations. Finally, you can find the escription of some tests done on mockups using a commercial product which contains α-amylase enzyme (Albertina-Kompresse®), with the aim of removing starch paste from a linen fabric.
