Resum
[eng] Municipal markets have been the subject of study by retail gentrification. The adaptation of these "old" commercial centres to the requirements and values of consumer society has led to a significant change in their original functions, which were eminently related to supplying the working classes. Barcelona's markets are a particularly interesting case study given their large number, more than 30, many of which have a high heritage value and play an important role in the daily life of the city. However, not all markets are part of the same dynamic of transformation. The aim of this research is to explain the territorial variables involved in the different paths of retail modernisation of municipal markets. The main hypothesis is that the retail gentrification and touristification of municipal markets is only a valid strategy for those markets located in the city centre and that other modernisation strategies are necessary for the rest of the markets, many of which are located in the suburbs or in the suburbs. The chapter aims to advance the concept of commercial gentrification at the academic level, at the applied level to support the design of better urban and commercial policies and is integrated within Sustainable Development Goals 11 (Sustainable cities and communities) and 12 (responsible production and consumption).
